From a vineyard of about 40 years above Trento at 300 m above sea level, with dolomitic / limestone soils, Dominic selects 100% Chardonnay grapes for this wine. Double harvest (one with higher acidity which contributes to 40% of the wine, with fermentation of the must only - the other with ripe grapes fermented up to half on the skins), assembly in large acacia barrels and aged on its lees for 12 months without filtration. A wine of structure, juicy, fresh and elegant.
