Château Pavie-Decesse, il meglio di Saint-Emilion
Château Pavie-Decesse is a Bordeaux winery located on the limestone plateau of Saint-Émilion. Having changed several owners over the years, the winery has seen development with the renewal of both the vineyards and the winemaking and ageing facilities.
The yields in the vineyard are very limited in order to give preference to quality over quantity, and the vines are over forty years old. The estate covers about 3 and a half hectares of land, where only two international red grape varieties are grown, Merlot and Cabernet Franc. Merlot is the undisputed star of the Grand Cru Classé of Saint-Émilion, and is well suited to the clay-limestone soil of these areas.
In the cellar, fermentation takes place with cold maceration in wooden vats, and the maturation process is carried out in French oak barrels. The production of Château Pavie-Decesse is limited, producing around 4,000 bottles each year, with complex and seductive bottles, full of freshness, minerality and a wealth of flavours and aromas.
