CHRISTOPHE MIGNON
Christophe Mignon, unique and natural Champagne
The Maison Christophe Mignon is a winery located in Festigny, 18 km from Epernay and 45 km from Reims, in the heart of Champagne. Christophe is the heir to a long dynasty of vignerons and manages about 7 hectares of vineyards cultivated mainly with Pinot Meunier, which grows particularly well in this area.
For 25 years, Mignon has been following principles of biodynamic agriculture, phytotherapy, homeopathy and phytobiology, and they manage work in the vineyard and cellar by following the phases of the moon. They limit the use of SO2, their wines are not filtered and there is no malolactic fermentation. The second fermentation is carried out with biodynamic yeasts and organic cane sugar, with careful temperature control so that this phase takes place very slowly.
"Our philosophy is to work alongside nature, with and for nature; this is a simple motto, but putting it into practice is much more demanding...". A viticulture that is based on respect for nature and its spontaneous phases, in a unique balance that binds all the elements of the earth and where only patience, careful work (there is a person working for every hectare of vineyard), low yields and the utmost search for quality make it possible to achieve excellent results.
