Ay Rouge La Côte aux Enfants 2015 is a fine French wine from the Champagne region, produced by Bollinger. The company, known for the production of high-end Champagne, also produces this interesting red wine made from 100% Pinot Noir, from grapes that derive from a single parcel of 4 hectares of vineyards, located in the municipality of Ay: the legendary and iconic "Cote aux Enfants", in the denomination of Côteaux Champenois. Small production for a wine of the highest quality, this Ay Rouge La Cote Aux Enfants is made with grapes that are vinified for a third with whole bunches, to keep intact the original characteristics. The vinification takes place in a traditional way, before the aging that takes place in small old barrels for 8 months. The result is a concentrated and powerful wine, with great aging potential. The color is ruby red tending to garnet. The nose is invaded by an evident spicy aroma, followed by a delicate scent of elderberry flowers and red fruit such as cherry and berries. On the palate it is full-bodied, with a good balance between softness and a consistent tannic texture. The red fruits return to the mouth, along with a long finish of licorice and dark fruits. It goes well with dishes based on chicken or duck meat, perfect with braised in red wine.
