Barolo Parussi 2017 Chionetti
Barolo Parussi 2017 is a fine wine produced by Chionetti. Made with Nebbiolo grapes from the cru of the same name located in the municipality of Castiglione Falletto, where the vineyards are planted at 200 m a.s.l. Each step is performed with extreme care in respect of the terroir according to principles of natural viticulture, where the use of any chemical substance is prohibited. The harvest takes place between October and November, the medium / long alcoholic fermentation takes place in wooden vats, at moderate temperatures with maceration on the skins for about 20-30 days. This is followed by a passage in large un-toasted French oak barrels. The wine does not undergo any filtration or stabilization. This fine Barolo Parussi 2017 to the eye is ruby, slightly opalescent. In its youth, the nose presents nuanced, floral and red fruit notes, to which is added a particular earthy note and the final balsamic hints of licorice and spice. The mouth is pervaded by a sensation of freshness combined with great complexity. Important but silky tannic texture and a long savory finish.
