Champagne Dom Perignon 1995 Moet & Chandon

Dom Perignon is the most famous Champagne in the world, a symbol of luxury, elegance and prestige it owes its name to the Benedictine monk Dom Pierre Perignon to whom the legend attributes the birth of modern Champagne. Its history began in 1936, when the president, Robert-Jean de Vogue, decided to create a bottle of Champagne unique in the world by creating a cuvée with the grapes of the 1921 vintage, since then Dom Perignon has become a vintage Champagne which is produced only in the best vintages.

Grapes are cultivated in the Grand Cru vineyards of the Maison and in the Premier Cru lands of Hautvillers Abbey. Base wines are vinified in steel tanks before being blended and starting the second fermentation on yeasts followed by an aging of at least 6 years.

Dom Perignon 1995 on the nose expresses notes of guava and spicy green grapefruit zest that blend with stone fruit, white peach and nectarine. The wine breathes, this is complemented by notes of woody vanilla and warm delicately toasted brioche. In the mouth and fruit notes are majestic, ripe, fleshy and deep. Beyond the richness and a certain voluptuousness, it is the impression of coherence that dominates. The intensity is extraordinarily contained. All the sensations converge and persist, silky, saline and lymphatic, bitter and iodine.

Suggested pairings: Dom Pérignon Vintage 2009 is a wine that needs stimulation. It requires context and lends itself to being enhanced by strong contrasts. 

The champagne evokes vegetable and mineral worlds, which are manifested, for example, through a carbonara with sea urchins and cardamom mousse. It works perfectly with dishes with a particular texture: for example, octopus sautéed in butter marinated in Sicilian orange juice.
