Champagne Rosé “Les Rachais” Extra Brut 2009 Boulard
Rosé "Les Rachais" Extra Brut 2009 is a fine Champagne produced by Boulard. It is made from 100% Pinot Noir coming from two different plots in the area of Massif de Saint - Thierry, in the heart of Montagne de Reims. Vines have an average age of about 30 years old and are located in a silty and sandy soil.
This Rosé is produced according to the Rosè de Saignée method, which requires a contact of must with skins until the desired color gradation is reached and with it a release of aromas and tannins coming from skins. Spontaneous fermentation is done with indigenous yeasts and in contact with skins in small oak barrels, where malolactic fermentation also takes place. Bottling is done, just like harvesting, according to the phases of the moon.
Finally this Champagne will rest on lees for a period of about 7 years. Boulard's Rosé Les Rachais 2009 is a very characteristic Champagne, capable of combining structure and elegance, crispness and creaminess. It shows a brilliant rose color and a very thin and persistent perlage. Very elegant on the nose, where it expresses complex notes of spices, small berries, flowers and herbs, together with yeast and brioche. The sip confirms the great finesse of this Champagne, which reveals at the same time structured and creamy. Long and persistent sip.
