Champagne Millesime 2008 Extra Brut Vincent Brochet
Champagne Millesime 2008 Extra Brut is a fine wine produced in the traditional way by Vincent Brochet. Made from a blend of 30% Chardonnay and 70% Pinot Noir from the Premier Cru vineyards of Ecueil, the cuvée is composed of grapes harvested in 2008, an exceptional year.
Both in the vineyard and in the cellar, ancestral, non-invasive techniques are used, fully respecting the terroir. Vinification takes place entirely in oak barrels and attempts are made to avoid malolactic fermentation of the base wines, keeping temperatures low to give the wine a good dose of freshness. Once bottled, refermentation is carried out according to the principles of the Champenoise method, and the wine remains on its lees in the bottle for about 60 months. The final dosage is 3 g/l and is in fact classified as Extra Brut.
Vincent Brochet's Champagne Millesime 2008 Extra Brut is an elegant and rich Champagne, with a bouquet of dried fruit, ripe peaches and delicious hints of pastry. The sip balanced between a remarkable structure and a nice freshness conferred by the low residual sugar, make it an important and complex Champagne with a nice predisposition to aging.
