Champagne "Sous Le Mont" Blanc de Noirs Jacques Selosse
Champagne Sous Le Mont is a fine Champagne Blanc de Noirs produced by Jacques Selosse. It is made from 100% Pinot Noir grapes from the Grand Cru vineyard of Mareuil-sur-Ay and is part of a series of Champagne called Lieux-Dits because they come from particles in the panorama of the most prestigious Grand Cru. Each working phase is followed with extreme care according to the principles of biodynamic agriculture, with no sulphites or added chemicals. The fermentation is spontaneous and takes place in barriques separately according to the different parcels to enhance the characteristics of the terroir; The refermentation takes place in the bottle with rest on the lees for at least 6 years, and minimum dosage. Bright golden yellow color, it has a fine and persistent perlage; The nose shows elegant and complex hints of ripe fruit with yellow flesh, candied orange, small berries and a delicate hint of dried fruit. In the mouth it is powerful and structured, with a good acidic shoulder and beautiful minerality.
