Filagnotti 2018 Cascina degli Ulivi
Cascina degli Ulivi's 2018 Filagnotti is a natural wine from Piedmont. It is one of two historic labels from the winery founded by Stefano Bellotti, a forerunner of biodynamic viticulture in Piedmont. This white wine is made from a blend of Cortese and other white and red grapes from the South Piedmont area (Novi Ligure), from plants that are about 60 years old.
All stages in the making of this bottle follow nature-friendly principles without sulphites or other chemicals: after destemming and gentle pressing of the grapes, a static defecation for 24 hours follows. Alcoholic fermentation takes place spontaneously with indigenous yeasts in 25 hectolitre acacia barrels, where malolactic fermentation also takes place. Without any clarification or filtration, the wine is bottled with a ban on the use of sulphur dioxide.
The Filagnotti 2018 shows a straw yellow colour with golden reflections; on the nose it expresses fruity aromas of ripe yellow peaches and almonds on a spicy and mineral background. The taste is straight and savoury but at the same time rich and very persistent. A great white wine that offers great emotions even after a few years of ageing.
