Domaine Ami, fine organic burgundy winesDomaine Ami was born from the desire to keep a friendship alive: that between the talented winemaker Willy the charismatic Paul.
After training and working for the Domaine de Montille, he took care of the winemaking at the Clos du Mulinaux Moines in Auxey-Duresses.
These experiences have given him the opportunity to accumulate a great knowledge of the Cote de Beaune terroir. His friend is Paul, who studied the art of tasting between London and Paris and represents the countryside and the city.
The passion for important and structured wines will lead him to collaborate with exceptional winemakers such as Dominique Hauvette and Oronce de Beler. Their adventure began two years ago, immediately they started producing wine using organic methods. The vinification is carried out so as to be as respectful as possible towards the grapes and the terroir of origin.
The minimal interventions in the vineyard and cellar, the winemaking carried out spontaneously with the use of only indigenous yeasts, all this aimed at producing authentic, warm and seductive wines.
