Arbois Pupillin Savagnin Ouillé 2000 Pierre Overnoy
Arbois Pupillin Savagnin Ouillé from Maison Pierre Overnoy is a fine white wine from the Jura, a special interpretation of Savagnin in full casks that makes it a rich and powerful wine, destined for a long life. It fully represents the style of Pierre Overnoy, who during his studies and research has experimented with the method of full barrels for white wines and no use of sulphites, to obtain pure wines that are as faithful as possible to the terroir of Pupillin.
This Arbois Savagnin Ouillè 2000 is also a difficult bottle to find, as only a very limited quantity is produced. It is made from pure Savagnin grapes from a 2-hectare vineyard on soil composed of grey and blue marl. The fermentation is spontaneous with maceration on the skins in 25 hl stainless steel tanks, while the refinement takes place in full casks for 8 months.
It has a deep golden yellow colour and expresses a nose of ripe yellow fruit, honey and minerals. The taste is powerful and structured, soft and buttery but still with a certain degree of freshness, as Overnoy's wines are predisposed to long ageing.
