Champagne Ascendant Solera Grand Cru Extra Brut Mouzon Leroux
The Champagne Extra Brut Grand Cru "L'Ascendant" is a natural Champagne produced by Mouzon Leroux, made from Pinot Noir and Chardonnay grapes that come from the renowned Grand Cru territory of Verzy. The name "Atavique", refers to the ageing with the Solera method, which makes the Champagne particularly complex and evolved, characteristics enhanced by the long aging on the lees.
Biodynamic farming principles are followed both in the vineyard and in the cellar, with the aim of guaranteeing the authenticity and territoriality of the wines. Fermentation takes place spontaneously in oak barrels with indigenous yeasts and the wines rest for 6 months, including malolactic fermentation, before being blended with the reserve wines, which are stored in the Maison's cellars using the Solera method.
Secondary fermentation in the bottle is carried out according to the Champenoise method with a minimum of 40 months' rest on the lees before dégorgement. The Champagne shows in the glass a beautiful pale straw yellow colour with a fine and persistent perlage. The nose expresses hints of ripe yellow fruit, citrus peel, toasted nuts, pastries, vanilla and spices. The sip is rich, complex and harmonious.

Second fermentation in the bottle according to the Champenoise Method, ageing on the lees in the bottle for a period of 40 months.
