Les Ammonites 2018 Domaine Buronfosse
Les Ammonites 2018 Domaine Buronfosse is a natural white wine produced by Domaine Buronfosse. It is made from 100% Chardonnay grapes and the name comes from the composition of the soil on which the vines grow, a marl rich in ammonites which are fossils of squid. The grapes are harvested by hand, followed by a 24-hour static decantation and then a soft pressing that allows for greater fidelity with the original characteristics of the grapes. The wine ferments with indigenous yeasts and ages in used barriques for around 18 months. Les Ammonites 2018 Domaine Buronfosse is an interesting white from Chardonnay that gives an intense and complex nose of citrus, white flowers and spices. The sip is balanced between richness and freshness which is especially expressed on the finish.
