Dominio do Bibei, biodynamic wines from Spain
Dominio do Bibei is a Spanish winery located in the Quiroga-Bibei area of Manzaneda, in the north of Spain, in a beautiful setting of mountain ranges and rivers that give freshness and minerality to the wines, but despite this has a drier climate than other surrounding subzones.
Its founder is Javier Domínguez, owner of an estate of around 125 hectares in total, 45 of which are planted with vines. The company's philosophy is based on the principles of biodynamic viticulture, inspired by tradition and respect for the terroir, always with an eye on innovation. In the vineyard, on renovated old terraces, old vines of Mencía , Garnacha , Brancellao and Mouratón are grown.
In addition to red varieties, there are plantations of white varieties such as Doña Blanca , Godello and Albariño, on soils rich in slate, granite and clay that alternate with hills. In the winery, fermentation and ageing are not carried out in steel, but only in wood and cement of various sizes.
