Trento Doc Spumante Pas Dose Riserva 2016 is a Metodo Classico sparkling wine from Trentino produced by Tenuta San Leonardo. It is a Blanc de Blancs Pas Dosè, produced with 100% chardonnay grapes cultivated in the hills of Pressano, from vineyards located at an altitude of 400 meters (1,640 feet), on marly calcareous soils which give full bodied wines, and in the upper part of Cembra valley, between 400 and 700 meters (1,650 and 2,500 feet) of altitude, on sandy soils of porphyry origin where more floral wines are produced, with high acidity and crispness.
Fermentation takes place in steel tanks for a period of at least 8 months, an element which increases the complexity and aromatic intensity. Then it remains for at least 36 months in aging where the magic of the wine comes to life.
Finally, after disgorgement, it rests for 6 more months in bottle in the estate's cellars. Trento Doc Spumante Pas Dose Riserva 2016 is an extremely elegant and vertical sparkling wine with a strong personality, characterized by an intense nose of citrus, plum and mineral notes. The sip is straight, elegant and persistent.
