Bisson wines were born at the dawn of 1978 when Pierluigi Lugano, an established master of art and sommelier, aware of the potential that he sensed to be hidden in the harsh wines of the Ligurian farmers, decided to attempt the adventure of enhancing the grapes of the Ligurian Riviera del Levante. He began buying small batches of grapes from the farmers scattered throughout the territory and making them into wine in his own cellar, carrying out numerous experiments with modern winemaking techniques to understand how to treat the local grapes. Begun as a game, Pierluigi Lugano's extravagant idea to refine "Abissi" Spumante on the seabed gave birth to a sparkling wine never made before, which over time has become an institution among the classic Italian methods. Typically, in fact, caves or cellars are chosen for ageing and someone has tried to do it in the high mountains. Lugano, on the other hand, has been able to combine a love of wine with a passion for the sea and, for the refinement of its Spumante "Abissi", it has chosen the sea bed, thinking of the ancient wrecks of the galleons at the bottom of the sea, which have repeatedly returned food products (wine) that are well preserved and have intact organoleptic characteristics". Thus, the bottles rest for eighteen months at a depth of 60 metres with a constant temperature of 15°, with the sea currents cradling the wine instead of man. And once back on the surface, as evidence of its history, each bottle of "Abissi" brings with it incrustations of oysters and small crustaceans, protected by a special film.
Abissi Dosage Zero 2014 is a classic Portofino DOC sparkling wine based on Bianchetta, Vermentino and Cimixia, the color is an intense straw yellow with a fine and persistent perlage characterized by a complex bouquet between vegetal and brackish as well as a marked minerality to the taste.
It is immersed in the seabed of Portofino in stainless steel cages at a depth of 60 meters at a constant temperature of 15 ° with a stay of eighteen months.
