The “Cuvée Spéciale Les Chétillons” 2011 is a Champagne Brut Blanc de Blancs Grand Cru from the Pierre Péters winery, produced in Mesnil sur Oger in the heart of the Cote des Blancs, in the Champagne region of France. This special Blanc de Blancs is made from pure Chardonnay grapes from old vines aged between 35 and 80 years, from only 3 lieux-dits classified grand cru, located on hills characterized by soils with soils rich in limestone and pebbles . After being harvested in a state of perfect ripeness, the grapes are then gently pressed and the alcoholic fermentation of the must obtained takes place in stainless steel containers at a controlled temperature. They are then bottled and the refermentation takes place in the bottle according to the principles of the Champenoise method, with rest on its lees for at least 48 months. The Grand Cru “Cuvée Spéciale Les Chétillons” Blanc de Blancs Brut by Pierre Péters shows a bright golden yellow color with a fine, numerous and persistent perlage. The nose expresses refined hints of white fruit and citrus, including peach, pear and orange peel, delicate notes of white flowers, including hawthorn and acacia flowers, and then ginger and almond, with a hinted finish of dried flowers, bread crust and a slight mineral note of chalk.
