Champagne Extra Brut La Montre Paul Gosset
The cuvée La Montre Extra Brut is a fine Champagne produced by Paul Gosset. It is a cuvée made on the principle of the perpetual reserve: a 30% percentage of reserve wine is added to a 70% of the vintage current harvest, which derives from the old vintages of the range. In the specific case of this bottle, which is the first edition of this idea, on the label there is a clock indicating 2 hours to symbolize the two vintages that enter its blend: 2016 and 2017. When the clock reaches 12 hours, the 12 subsequent vintages will be found in the blend of Le Montre. Paul Gosset's Champagne La Montre is a blend of the company's 4 terroirs: Aÿ, Mareuil-sur-Aÿ and Dizy in the Marne Valley and Chouilly on the Côte des Blancs, all classified as Premier and Grand Cru. The assembly is made up of 75% Pinot Noir, 20% Chardonnay and 5% Pinot Meunier. This cuvée is vinified at 70% in oak barrels and 30% in vats. After their refinement, the wines of each vintage are bottled. The dosage is very light, about 3 grams per liter, in order to leave a nice tension in the wine.
