Champagne Initiation NV Benoit Dehu
The Champagne Initiation NV is a fine Champagne produced by Domaine Benoit Dehu. It is the most recent label of the Dehu Champagne line, used by a blend of 78% Pinot Maunieur which was planted by Benoit from clones of Pommard plants in Burgundy, and 22% Pinot Noir. Levers come from 1 parcel (Lieu-dit) of just 1.7 hectares called Rue de Noyers, in the village of Fossoy. The vinification takes place in 228 liter oak barrels, spontaneously with only indigenous yeasts, according to referment on the yeasts in the bottle 20 months before the degorgement. The Champagne Initiation NV is an extremely fine and enveloping wine, with a mainly floral and spicy profile, but also exotic. It is not dosed and this choice fits perfectly for this Champagne with a vigorous but round taste, of good balance.
