Champagne La Colline Inspiree Jacques Lassaigne
Champagne La Colline Inspiree is a fine Champagne produced by Jacques Lassaigne. The cuvée is composed of 100% Chardonnay grapes from a small vineyard in Montgueux, a total of three plots made up of 50-year-old vines planted on calcareous soil, cultivated with extreme care and principles of organic and biodynamic agriculture in order to obtain the maximum expression of the terroir. No chemical products are used, the yields in the vineyard are minimal and the harvest is carried out by hand. In the cellar, the base wine that gives life to this Champagne undergoes first an alcoholic fermentation and then a complete malolactic fermentation in barrels for 12-24 months. Finally, it is aged for a period of about 18 months in the bottle before disgorging. Jacques Lassaigne La Colline Inspirée is a champagne Blanc de Blancs very elegant, fresh and mineral. It expresses a beautiful bright straw yellow colour, while the nose offers aromas of fresh white fruits, such as peach and apricot, notes of citrus and hints of dried fruits and pastries. The sip is fruity, refined and complex with a nice structure, a well-integrated bubble and a mineral finish.
