The Rosé Bitrotage B.11 NV is a fine Champagne from the Charles Dufur / Domaine Francoise Martinot company. It is made with 100% Pinot Noir grapes that come from the vineyards of the Vallée de L'Arc (Cote de Bar), in this line called Bitrotage whose grapes all derive from land belonging to the mother of Dufur, Francoise Martinot, for this on the label both names are listed. The plants rest on clayey-calcareous soils, and are cultivated in a natural way without the addition of chemical substances. In fact the company, after a first traditionalist approach, in 2000 was converted into organic when Charles Dufur, taking the reins, started work based on innovative ideas of producing pure Champagne in full respect for the terroir. Fermentation takes place in wooden vats and re-fermentation in the bottle as required by the Champenoise method. This Champagne Rosé Bitrotage is a very elegant rosé Champagne, with a bright pinkish color tending to orange, a predominantly fruity aromatic profile (given by Pinot Noir), citrus, mineral. The sip is fresh and dynamic, but very soft. A fine example of Rosé de Saignée, elegant and pleasant to drink.
