Chateau Chalon 2014 Domaine Tissot
Château-Chalon from Domaine A. & M. Tissot is a white wine from the Jura region of France produced with natural methods. It is produced with pure Savagnin grapes coming from a clayey soil, from vines of about 30 years old. After destemming and pressing, the must undergoes spontaneous fermentation in cuvée and is aged in old vats on the fine lees for 6 and a half years (of which 6 months in full casks and 6 years in "sous voile" barrels). It is a biodynamic white wine made in oxidative style, characterized by intense and complex aromas of citrus, ripe yellow fruit, spices and slight iodine and oxidized notes, for a sip where freshness, flavor and tension are balanced to perfection with alcohol, richness, elegance and depth. An authentic, powerful and fascinating wine.

VINIFICATION: Destemming, pressing and spontaneous fermentation with indigenous yeasts in steel. Minimum sulfur content: 20 mg/l Aging 78 months in old oak casks of which 72 months in "sous voile" casks, that is with flor yeasts.
