Muscadet Sevre Et Maine Chateau-Thebaud 2014 Domaine de la Pépière
Muscadet Sevre et Maine Château-Thébaud is a fine wine from the Loire valley produced by the Domaine De la Pépière, made from over 70 years old vines of the Melon de Bourgogne grape variety. The age of the vineyards, together with the particular composition of the terroir and the careful vinification carried out according to principles of organic agriculture, gives life to a bottle of great thickness and complexity: Château-Thébaud is located near the Maine river, southeast of Nantes. The granite subsoil has many cracks, this allows the soil, composed of an ideal proportion of clays and sands, to act as a filter, and the roots grow between the rocks. The grapes are harvested manually, then carefully transported to the cellar; the pneumatic press is filled by gravity, therefore the grapes are not pressed; fermentation takes place spontaneously for a month in a tank located in the basement of the cellar. After the wine begins to mature in wood, the "batonnage" is carried out, a technique that confers body, great aromatic complexity and gustatory richness to this wine. Muscadet Sevre et Maine Chateau Thébaud spends 30 months on the lees before bottling: bright straw yellow color, it expresses a dense bouquet of spices, herbs and balsamic touches (fennel and licorice are evident). In the mouth it is dense, creamy, mineral and still retains a good dose of acidity, an element that allows, together with other characteristics, to make this Cru suitable for aging.
