Samuel Billaud is descended from a renowned family of winemakers in Chablis. For years he was the winemaker of the Domaine Billaud-Simon, a leading winery of the old Chablis vigneron school. In 2009 he decided to set up his own Domaine, Domaine Samuel Billaud.
Since he started selling Chablis wines with his label, he has been very successful and his Chablis bottles are now sought after all over the world by fans of chardonnay that comes from the cold and lovers of good wine in general.
In 2015 he bought and moved to a new winery in the heart of Chablis, previously owned by Stéphane Moreau-Naudet. It was set up with the most modern technology and built vertically, the wine is pumped into steel tanks only once the rest is gravity.
At the same time as the new winery, Samuel Billaud also purchased four hectares of land belonging to Domaine Billaud-Simon, in the grand crus Les Clos, Vaudésir, Montée de Tonnerre, Mont de Milieu, Séchet, and in the vineyards at village level Les Pargues and Chapelot, as well as a Petit Chablis plot directly north of Les Clos. In addition, it is supplied with fruit from the Blanchots, Valmur and Bougros grand crus. Thanks to his deep roots in Chablis, Samuel is able to buy grapes from some of the best and most established growers.
In the cellar only Chablis Premier Cru and Chablis Grand Cru are matured in wood, large 450 and 600 liter barrels with 15% new wood are used, the rest fermented in small steel tanks.
The range of Chablis wines from Domaine Samuel Billaud, from the Village to the Grand Cru, is composed of refined wines with intense noses with a mix of aromatic profiles ranging from licorice to white peach to toasted baguette.
