Silex 2009 Didier Dagueneau
Silex is a fine white wine produced by Didier Dagueneau. It is produced under the appellation Pouilly Fumè obtained by pure Sauvignon grapes, coming from vines more than 60 years old which grow in siliceous soils. The type of terroir gives the wines very particular characteristics of minerality and sapidity, characteristics which are tried to be preserved through a sustainable agriculture based on biodynamic principles. After the manual harvesting of the grapes, the grapes are destemmed and crushed and the wine is spontaneously fermented, aged partly in stainless steel tanks, with six months on the fine lees, and partly in small oak barrels. Silex 2009 shows an intense golden yellow color, with a rich and intense nose of candied orange peel, ripe exotic fruit, flint and vegetal hints. The taste is deep and persistent, enlivened by a great crispness and sapidity. An incredible white wine, a real gem not to be missed.
