Bourgogne Chardonnay 2015 Paul Pillot
Bourgogne Chardonnay 2015 is a fine French Burgundy wine produced by Paul Pillot. It is made from 100% Chardonnay grapes from vines with an average age of 35 years that come about 40% from the commune of Chassagne Montrachet and about 60% from the commune of Remigny, which is characterised by a rocky profile. After manual harvesting, the bunches are completely destemmed and the grapes are placed in a stainless steel vat where fermentation starts and lasts about 1 month or a month and a half. The wine is aged for 12 months in wood, 10% of which is new, after which it matures for a further 6 months in steel before bottling and being sold. This 2015 Bourgogne Chardonnay from Paul Pillot offers a bouquet of yellow fruits, flowers and predominant minerality, in the mouth it is fresh and pleasant and recalls the fruit perceived on the nose, as well as returning mineral notes and ending with a nice salty finish.
