Bourgogne Rouge Bedeau 2019 Frederic Cossard
Bourgogne Rouge Bedeau 2019 is a fine wine produced by Frederic Cossard. The entire winemaking process follows natural viticulture practices, starting with the Pinot Noir grapes that are not owned by Cossard but are purchased from winemakers who respect his production philosophy: no herbicides or other chemicals are used, the harvest is manual and the grapes are carefully selected.
Traditional fermentation takes place in wooden vats for 5-6 weeks, including malolactic fermentation, with subsequent resting on the lees. After maceration, the wine matures in barriques for a maximum of 3 years.
Cossard's Bourgogne Rouge Bedeau 2019 has a bright ruby red colour; the nose expresses fruity hints of raspberry and blackcurrant, along with spicy notes and balsamic touches of liquorice. The taste is soft and enveloping, with silky tannins and hints of fruit. This bottle should be served at a temperature of 16°, in combination with red meats and structured cheeses.
