This is an excellent sparkling wine, among the oldest and most famous in the world and has always been a symbol of luxury and elegance subject to one of the greatest difficulties that winemakers are forced to face: the maintenance of the same high quality of their product thousandth after thousandth (i.e. vintage after vintage) regardless of the adverse weather conditions that affect the vineyard.
In practice, it does not matter if it will be too hot, too cold, if it will rain too much or not rain at all, the champagne must always be at the height of the previous year, a difficult task of the Chef De Cave of each House.
