Chablis 1er Cru "Foret" 2002 Raveneau
Chablis 1er Cru "Foret" 2002 is a fine French wine produced by Raveneau. The Chablis wines of this celebrated winery are unobtainable both because the vineyards are all exclusively 1er Cru and Grand Cru, and because of their inestimable quality and value: they require years of ageing before they can fully express their incredible complexity and longevity. After 8-10 years, these wines not only acquire greater richness and structure on the estate, but also reveal new layers of aromas and flavours.
The 2002 Chablis 1er Cru "Foret" is made from grapes from the 1er Cru "Foret" vineyard, just 0.67 hectares, from vines that have an average age of 10 years. The nose releases intense, deep aromas of wildflower honey with hints of lime and ripe medlar, toasted hazelnut together with mineral notes. In the mouth it is medium-bodied, balanced and long in the finish with the appearance of mineral notes and acidity.

WINE-MAKING: Pressing in a pneumatic press, alcoholic fermentation takes place spontaneously with indigenous yeasts for a fortnight, followed by malolactic fermentation in barrels. Maturation takes place in old oak barrels of which a very small percentage are new barrels, for 18 months.
