The dosage is a typical practice of improvement of the vinification of a sparkling wine with Metodo Classico or Champenoise that foresees, before the final bottling, the addition of the so-called liqueur d'expédition in order to correct the acidity.
The liqueur d'expédition, or dosing syrup, can contain sugar, a distillate (aged or not) or a wine aged in barriques of previous years more sugary that, mixed with champagne in vinification, allow to sweeten the sparkling wine that otherwise would be too dry.
This selection of Pas Dosé Champagne are wines that have not been blended in vinification with the liqueur d'expédition but with a wine of the same batch, thus avoiding its sweetening, preserving its dry appearance and giving a taste much closer to its natural organoleptic characteristics.
A Pas Dosé champagne is much more acidic and less sugary, so in this case we speak of Zero Dosage or Brut Nature champagne.
WHAT IT CONTAINS:
Philippe Glavier La Grace d'Alphael Grand Cru Brut Nature: zero-dose champagne from a major artisan producer. Bright straw yellow, with brilliant and deep reflections, fine and persistent bubbles.
Mineral on the nose, iodised and floral on the finish with a delicate scent of acacia and white peach, lemon and apricot. The last notes surprise with hints of almond and licorice.
The palate is creamy, full-bodied, but at the same time fine and refined with a fresh note of lemon that balances with acidity the basic salinity.
Perfect for dishes where the iodine character predominates
Tarlant Rosè Brut Nature: Tarlant's "Zero" Champagne is an intense and elegant pas dosé, with a complex, dry and lively profile, aged on the yeasts in the bottle for 48 months. The toasted aromas of citrus and dried fruit are supported by a good freshness: the taste is balanced, full-bodied and dynamic. The "Zero" Champagne Brut Nature is golden yellow with greenish reflections and creamy foam. The nose is lively and complex, with notes of citrus and dried fruit. The palate is a beautiful balance of freshness, flavor and minerality. Full-bodied and pleasantly bubbly.
Christophe Mignon Brut Nature Pur Meunier: champagne obtained from Pinot Meunier in purity, has a truly amazing creaminess, fine effervescence and non-aggressive, with fine bubbles, numerous and well-defined. Straw yellow in colour, it has a spicy bouquet and a flavour of pear and dried fruit. It goes well with seafood appetizers, grilled and fried crustaceans, seafood first courses, white meat main courses.
