Chardonnay 2019 By Farr
Chardonnay 2019 is an Australian Chardonnay-based white wine produced by the By Farr winery. The winery's three acres of Chardonnay vineyards were planted in 1994 and are located at an elevation of 120 metres with a north-eastern exposure, on red calcareous soil. The clones used for the Chardonnay are a mixture of Dijon and Penfolds 58 clones, which give particular mineral notes, great acidity and length to the wines.
Harvesting is by hand and then there is whole cluster pressing in the cellar. The must is cooled before being put into 30% new French oak barrels where spontaneous fermentation with indigenous yeasts takes place for a couple of months. Once alcoholic fermentation is complete, malolactic fermentation takes place, ending in mid-spring. The wine was then racked, aged and lightly filtered before being bottled 11 months after harvest.
This 2019 Chardonnay has a bright intense golden yellow colour, with a nose mainly composed of mineral aromas and notes of wood and spice. The sip is elegant but firm with great acidity, texture and length.
