Pinot Noir Ray-Monde Vineyard 2019 Joshua Cooper
Pinot Noir Ray-Monde Vineyard 2019 is an Australian wine produced by Joshua Cooper. Doug's Vineyard is located on the outskirts of the town of Romsey in the Macedon Ranges. The climate here is cool, the vines sit at an altitude of about 1,700 feet on a north and north-east facing hilltop on a rocky red volcanic basalt soil, which gives intensity to the fruit, which however ripens in small clusters and low sugar doses.
After manual harvesting and careful selection in the vineyard, 100% is transferred as whole bunches into open fermenters. The must was left to macerate 4-5 days at its cool room temperature until fermentation began. The grapes were then gently extracted using a combination of pumping over and foot-pigéage. The wine is then pressed after a total of three weeks on the skins and transferred to a single new (Laurent "Magic Cask" thick stave, blond toast) three young (2-4 years Laurent "Magic Cask") and eight old (6-10 years) Burgundian oak pièce for aging on the lees for 12 months, followed by six months in stainless steel on the fine lees. The wine is lightly racked and bottled unfiltered with the only addition to the wine being a small amount of sulphur the week before bottling.
The Pinot noir Ray-Monde is a luminous ruby red colour. The nose expresses the typical terroir of Doug's Vineyard, through characteristic exotic spices, hints of rose, earth, herbaceous hints and concentrated black cherry and raspberry fruit. Long, elegant and deep on the palate, with silky but present tannins and high acidity.
