Sangreal Pinot Noir 2018 By Farr
The 2018 Sangreal Pinot Noir is an Australian red wine produced by the By Farr winery. The Pinot Noir grapes come from the Sangreal vineyard, which means Holy Blood or Holy Grail, suggesting the exceptional nature of this terroir: in fact, this vineyard is one of the oldest on the estate, planted in 1994 that sits on a north-facing slope on a blue stone and limestone soil, with red ironstone colouring the surface.
This terroir differs from the other vineyards, which are mostly composed of black volcanic soil with large amounts of limestone on the surface. Spontaneous fermentation takes place with 60-70 per cent whole clusters and ageing in new oak barrels, characteristics that give the wine a very intense aromatic profile, making it the most fragrant of the three Pinot Noirs by Farr.
It is fermented in a five-tonne oak cask with an open fermenter, and cold soaked for four days before a natural seven to nine day fermentation. Once the cap falls off, the tank is pressed. The wine is racked only once after malolactic fermentation, then sulphurised and bottled, the whole process taking a total of 18 months. The wine is unfiltered to maintain its natural flavour and bouquet.
