Chablis 1er Cru Vaillons 2017 Domaine Dominique Gruhier
Chablis 1er Cru Vaillons 2017 is a fine wine produced by Domaine Dominique Gruhier. It is made from 100% Chardonnay grapes that come from the eponymous 1er Cru vineyard, on a special soil and sub-soil 100% Kimméridgien that gives great elegance and minerality to the Chablis wine. The fermentation is spontaneous, using only indigenous yeasts, and the ageing is carried out entirely in stainless steel for at least 11 months. The choice of stainless steel is aimed at preserving the fresh characteristics of the Chablis white wine. Bright golden yellow in colour, this 1er Cru Vaillons from Dominique Gruhier expresses a nose of white-fleshed fruit, flowers and mineral and balsamic notes, with a touch of menthol. The palate contains the distinct freshness typical of Chablis, but at the same time has a particular roundness and creaminess, with an aromatic profile consistent with the nose. A great Chablis that is well suited to ageing.
