The cultivation of vines is done according to lunar cycles with the utmost respect for nature, no chemical interventions are done, the earth is occasionally helped only with fertilizers obtained from the animals of the company. During vinification only indigenous yeasts coming from the grapes and from the cellar are used, fermentation is spontaneous and takes place in large open vats with no temperature control while aging takes place in fiberglass tanks. No filtration is done.
The golden color already declares the originality of its character that recalls with great energy aspects of the Mediterranean refined and wild at the same time. It is the wine which is most in line with the historical roots of the place and bears witness to the vocation of the vine for prolonged fermentation where the thick skin of the vine is able to give all the aromatic heritage resulting from perfect maturation. The nose has intense aromas of aromatic herbs, candied fruit and Mediterranean scrub, in the mouth is astringent, fresh and very long.
