Fiano "Don Chisciotte" Zampaglione
The Fiano "Don Chisciotte" of Zampaglione is a white wine from Campania, a great example of this native grape variety of the region Campania intense and mineral. The company works a few hectares of vineyards at 800 m on clayey and calcareous soil, cultivated without the use of chemical or synthetic substances, and maceration on the skins more or less short depending on the vintage. Fermentation takes place spontaneously in steel tanks, with maceration on the skins for about 10 days, and then refined for a few months in steel tanks before bottling. Fiano Don Quixotte shows a very bright golden colour: the nose has aromas of citrus fruits, chestnut and white flowers, and mineral salts. Long and savoury sip.
