"Il Galantuomo" Umbria IGT 2018 Collecapretta
"Il Galantuomo" from Collecapretta winery, is a particular and definitely unique wine. It is produced in Umbria, in Martani Mountains, in the province of Spoleto. It is produced with a Barbera grape of at least 50 years of age and of Piedmontese origin, where the grandfather of the current owner of the winery, Vittorio Mattioli, did his military service.
Just like the other wines of Collecapretta winery, "Il Galantuomo" comes from an organic cultivation, without any chemical intervention in the vineyard, where the winery allows itself to use only the organic manure produced by its own animals, in the winery the same non-interventionist philosophy is followed, spontaneous fermentations without temperature control, use of yeasts coming from the grapes or from the winery itself, no filtration nor clarification, zero sulfur added.
Grapes are harvested by hand and the must is fermented in large cement tanks in a spontaneous way, in the same tanks will remain for some months to refine.
Galantuomo Collecapretta shows in the glass a beautiful ruby red color accompanied by an explosive bouquet of red fruit and sanguine minerality given by the soil from which it is produced. The acid vitality is one of the most beautiful aspects of the taste dynamics which amplifies a flavor of cherry and field grass. A rich and magnetic red. Perfect on cured meats and grilled meats.
