"Il Burbero" Umbria IGT 2017 Collecapretta
Il Burbero is a natural red wine produced by Collecapretta, a Mattioli family winery located in the Martani Mountains in the province of Spoleto. It is produced with overripe Sangiovese, Ciliegiolo and Merlot grapes coming from vineyards cultivated in the hills according to the traditional Umbrian espalier method.
Just like the other wines of Collecapretta, "Il Burbero" is the result of a natural cultivation, without any chemical intervention in the vineyard, where the winery uses only the organic manure produced by its own animals, in the cellar the same non-interventionist philosophy is followed, spontaneous fermentations without temperature control, use of yeasts coming from the grapes or from the cellar itself, no filtration nor clarification, zero sulfur added.
"Il Burbero" Collecapretta shows an intense ruby red color in the glass, the aromatic profile is characterized by ripe notes of dried fruit, dried flowers, cloves, prunes and iodine notes. In the mouth the taste is firm and dry with a nice sapid finish. A wine which is a splendid companion for game meat and medium seasoned sheep cheese.
