"Lautizio" Ciliegiolo Umbria IGT 2019 Collecapretta
"Lautizio" is a natural wine produced by Umbrian winery Collecapretta, located in Martani Mountains near Spoleto. It is produced with Ciliegiolo grapes coming from vines aged from 15 to 50 years old.
Just like the other wines of Collecapretta, "Lautizio" is the result of an organic cultivation, without any chemical intervention in the vineyard, where the winery is allowed to use only the organic manure produced by its own animals, in the cellar the same non-interventionist philosophy is followed, spontaneous fermentations without temperature control, use of yeasts coming from the grapes or from the cellar itself, no filtration nor clarification, zero sulfur added.
The vinification of this natural wine takes place in conical vats with a maceration on skins of 10 days, after racking it is left to refine in a glass resin barrel for the whole winter before being racked for the first time with the waning moon of February, the second at the end of March and finally being bottled in the first days of April. In no phase sulfur dioxide is added nor it is filtered.
Lautizio" shows in the glass a pretty ruby red color accompanied by typical aromas of the grape of cherry and violet. In the mouth it is full and thirst quenching with a nice acid note.

VINIFICATION: Spontaneous fermentation without temperature control in truncated conical vats with 10 days maceration on the skins, aging throughout the winter in glass resin barrels, first racking with the waning moon of February and second racking at the end of March. No added sulphur dioxide
