Bourgogne Blanc Le Chapitre 2018 Sylvain Pataille

Bourgogne Blanc Le Chapitre 2018 is a natural Burgundy wine produced by Sylvain Pataille. The Chardonnay grapes that make up this label come from the Le Chapitre vineyard, located north of the Village of Chenove. Le Chapitre is 5 hectares (12.4 acres) with an altitude of 290 meters. When the name of the village of Marsannay was created in 1987, all the villages of Couchey and Marsannay were included, but only the southernmost part of Chenôve. Since Le Chapitre is located north of the village it has not been included in the appellation, but is unquestionably one of the largest vineyards in this area. Sylvain considers him the best of the range after his Clos du Roy. So even if this wine is found under the Bourgogne appellation, it has very high quality levels worthy of any great Marsannay.

VINIFICATION: soft pressing, spontaneous fermentation with indigenous yeasts, maturation in new barriques for 1/3 from 12 to 15 months, minimal addition of sulphites to the bottling.

Domaine Sylvian Pataille is located in Marsannay and has become a real reference in the field of natural viticulture in Burgundy. Sylvain has always been against the principles of standardised wine, seeking to obtain, through biodynamic methods, bottles that authentically reflect the terroir of origin. Sylvain's winemaking philosophy is entirely natural: indigenous yeasts, no chemicals and maximum fermentation temperatures of around 32°C. Winemaking is carried out in stainless steel and fibreglass before going into barrel, ageing is very slow and no sulphur is used. In this way Pataille gives life to authentic and pure wines.
