Bourgogne Rouge La Chapitre 2018 is a natural wine produced by Sylvain Pataille. It is the result of Pataille's desire to raise the Marsannay denomination to higher levels. Despite being classified under the Bourgogne Rouge appellation, this wine is at the top of the production for its class and elegance. After undergoing all the winemaking steps in keeping with Pataille's production philosophy, that is, far from any invasive intervention and the abolition of chemical substances both in the vineyard and in the cellar, it undergoes aging for 15 to 18 months in barrels (of which 35% is new wood). It reveals a ruby ​​red color rich in notes of small berries, black berries, flowers and spices. On the palate it has a soft and velvety texture with refinement and elegance. Already delicious today, although a few years of conservation will improve it further.

Domaine Sylvian Pataille is located in Marsannay and has become a real reference in the field of natural viticulture in Burgundy. Sylvain has always been against the principles of standardised wine, seeking to obtain, through biodynamic methods, bottles that authentically reflect the terroir of origin. Sylvain's winemaking philosophy is entirely natural: indigenous yeasts, no chemicals and maximum fermentation temperatures of around 32°C. Winemaking is carried out in stainless steel and fibreglass before going into barrel, ageing is very slow and no sulphur is used. In this way Pataille gives life to authentic and pure wines.
