Marsannay Clos Du Roy 2017 Sylvain Pataille

This Marsannay Clos Du Roy 2017 is a natural wine produced by Sylvain Pataille. It comes from the most famous climat of the Clos du Roy municipality. Located north of the appellation, at the gates of Dijon, where the vineyards rest on a disaggregated limestone clay territory, with vines between 15 and 60 years old. The vinification is in whole bunches in steel and fiberglass containers, then the wine Aging for a minimum of two years in old wood, with light filtration before bottling. Of the highest quality and elegance, it shows a bright ruby ​​red color; the nose is deep and complex with a bouquet of ripe red fruits, spices and licorice. On the palate it is full-bodied, with an evident velvety tannic texture. A wine to be appreciated immediately, which can be kept for a few years in the cellar to give even more valid emotions. Domaine Sylvian Pataille is located in Marsannay and has become a real reference in the field of natural viticulture in Burgundy. Sylvain has always been against the principles of standardised wine, seeking to obtain, through biodynamic methods, bottles that authentically reflect the terroir of origin. Sylvain's winemaking philosophy is entirely natural: indigenous yeasts, no chemicals and maximum fermentation temperatures of around 32°C. Winemaking is carried out in stainless steel and fibreglass before going into barrel, ageing is very slow and no sulphur is used. In this way Pataille gives life to authentic and pure wines.
