Pinot Noir "Untouched" 2015 Mammoth Wines

The 2015 Pinot Noir "Untouched" is a red wine produced in New Zealand by Mammoth Wines. Made according to organic farming principles, where no artificial irrigation is carried out in the vineyard to allow the grapes to preserve their original character, it is a straightforward and essential Pinot Noir whose vinification includes no destemming, no foreign additions, no cap management, no new oak, no clarification and no filtration. Only three inputs are essential for the winemaker to produce this wine: when to harvest, when to press, when to bottle. Nothing else is touched, the wine is left to speak for itself without forcing, and the image of fullness and uncontaminated power it expresses is highlighted by the wonderful label.
