Sauvignon Blanc "Three Skins" 2016 Mammoth Wines
The 2016 'Three Skins' Sauvignon Blanc is a New Zealand white wine produced by Mammoth Wines. It is an extremely consistent and rich white, made from Sauvignon Blanc from an organic vineyard on the Waimea plains outside Nelson in New Zealand.
This wine was fermented entirely on the skins: one-third cold fermented, one-third hot fermented, and one-third fermented with carbonic maceration. It then matures in a combination of French oak and acacia barrels. According to the production philosophy of Michael Glover, the owner of the estate, the vines are not artificially irrigated, there has been no addition of acid, yeast or enzymes to ensure the authenticity and respect of the grapes.
The Sauvignon Blanc "Three Skins" 2016 is a structured and creamy wine with a predominantly fruity flavour profile and hinted tannin.
