Barolo Chinato Cappellano
Barolo Chinato is a fine wine produced by Cappellano. This sweet aromatized wine has a historical importance because it was invented in the second half of the 19th century by the pharmacist of Serralunga d'Alba Giuseppe Cappellano as a remedy for seasonal ailments, given its anti-viral properties: it is in fact obtained by maceration of spices, including bark of China calisaia, rhubarb root and gentian with sugar and alcohol with Barolo wine. Today it is considered a reference of its kind and is consumed as a sweet dessert or meditation wine. It ages for at least 12 months in oak barrels and is dark amber red in color. It has an intense and deep nose reminiscent of vintage Barolo together with a good dose of spices and balsamic hints. The sip is rich, sweet but bitter, enveloping and very long lasting. Ideal with the combination of desserts with equally intense and persistent aromas, for example it is excellent with dark chocolate. Seductive and very interesting to be consumed also as a meditation wine.
