Perdand-Vergelesses Les Combottes 2019 Domaine Rapet
Perdand-Vergelesses Les Combottes 2019 is a white wine from Burgundy produced by Domaine Rapet.
It is made from Chardonnay grapes from the site of Pernand-Vergelesses, from vines located on a hill at an altitude of approximately 35o m exposed to the South - West that are difficult to work due to the steep slope (the name Combottes refers precisely to the hill).
After a harvest carried out to ensure that the fruit is well ripened, the grapes are gently pressed with a pneumatic press for two hours to obtain the best part of the must, which is then decanted for 24 hours at low temperatures, and transferred to 30% new barrels for fermentation. Maturation on the lees with batonnage lasts until July, and bottling takes place after 12 months of ageing.
Pernand-Vergelesses "Les Combottes" expresses itself in the glass with a straw-yellow colour with golden highlights. The nose of fresh fruit, spices, notes of honey and flint leaves room for a fresh, lively and elegant sip.

VINIFICATION: Gentle pressing of the grapes with an automatic press for two hours, fermentation in new barrels is 30%. Maturation on the lees with batonnage until July, bottling after 12 months of refinement.
